I've read about the droop and sometimes not centering of phone after recording and panning a bit. I too am experiencing those issues. But what I've found is if I apply a little pressure to the phone while the gimbal is active, I can get it back into original balanced position. Going through tuning process doesn't always correct it.
So my question is, will the manual adjustment harm the motors?

According to Freefly it is just a shaft and a bearing, and you cannot hurt them by manually turning the motors.
