When you guys make a movie how do you do it? Do you plan it, like a storyboard, or do you just fly and see what you will get.

I typically meet with the director of photography and/or cameraman before we go on a shoot, use Google satellite and/or Earth to check out the location, and try and come up with a shot list. Often, I'll then go out and check out the location myself as you really cannot see the height of trees, location of wires, etc.
Then I'll revise the shot list based on the hazards (especially those damn trees that can leap out into the copter's flight path).
Then we'll go shoot and, if time permits, play back the footage to make sure we got what we wanted.

So, to answer your question, not so much a story board as a shot list.

Edit: The above said, we'll not hesitate to do a grab shot of something that we see while we're shooting if something interesting happens (e.g. train goes by, car drives up dusty road, etc.)

    Andy.
